12 fresh figs, washed
a tablespoon of unsalted butter at room temperature
a tablespoon of sugar
35g almond powder
vanilla ice cream to serve
1) Preheat the oven to 200C
2) Cut the top from each fig and put to one side. With a teaspoon, scoop out the red pulp being careful not to break though the skin. Put the pulp in a bowl.
3) Make the mousse. In a medium-sized bowl, cream the butter and sugar, stir in the almond powder and then the fig pulp, mixing well after each addition.
4) Fill each fig with a teaspoon of the almond mixture and then replace the top on the fig. Arrange in a shallow baking dish and bake for 10 minutes, or until the mousse begins to melt and the figs are heated through.
5) Serve with vanilla ice cream.
